Coffee time treat.

Coffee and lemon loaf.

I’ve been on my own often this past year. And the one before.

Instead of rebelling against it, I’ve grown comfortable with my own company. To the point where I find it almost impossible to be social. I’ve had a couple of invitations over the past month, and I forced myself to accept and go. And I actually enjoyed the social interaction.

But…asking people over to my place, has remained a very difficult thing for me to do. Like they say, a whole other ball game! So this week I decided to do just that, but I started off slowly. I invited two of my neighbours over for coffee. I decided to bake a little something to make the coffee go down better, and chose a favourite from yeeeeeeeaaaars ago. A very simple, but usually a very delicious lemon loaf. And held thumbs that I still had the touch…

I think it came out okay, because both of the ladies had three slices.

So, for a change (actually a first!) – here is the recipe for the lemon loaf. If you want something quick, easy and delicious, give it a try.



125 g butter, room temperature
300 g/375 ml castor sugar (I used slightly less, about 300ml in total)
2 eggs
375 ml self raising flour
3 ml salt
125 ml milk
grated rind of 1 lemon
juice of 2 lemons

Preheat oven to 180° C (350° F). Grease a medium sized loaf tin.
Cream butter and 250 ml of the castor sugar together, add eggs and mix well.
Sift self raising flour and salt together and add in turn with the milk to the butter mixture.
Add lemon rind and mix.
Put mixture into the loaf tin and bake for 45 - 60 minutes.
Mix remaining sugar with the lemon juice and spoon over warm loaf.
Let it cool in the tin.
Turn out, cut, and enjoy!
